Ronnie's German Potato Salad

4 1/2 to 5 lbs. Yellow Dutch potatoes (Trader Joe's) or red potatoes

3/4 cup cider vinegar

2 T sugar

1 tsp. pepper

1 T salt or less

1 cup Canola or Vegetable oil

3/4 cup chopped yellow onions

10 slices bacon crisped, crumbled

1/2 cup curly parsley, chopped

1/4 cup chives, optional

Mix the vinegar, sugar, salt, pepper and oil for dressing

Boil the potatoes, then cool,  peel and  slice into a big bowl.

Add dressing, onions, the crumbled bacon, parsley, chives if using

Mix well. Taste. You might have to adjust the salt and pepper. If it all seems too dry, add some more vinegar, oil or hot water. Refrigerate overnight if possible. About an hour before serving, taste again, adjust the texture if too dry. Put it all in a casserole dish, so it can be baked in the oven for about 45 minutes at 350 degrees. Serve hot or cold.
